Baking in Colorado can be challenging, to say the least!

Whether it's the high altitude or the lack of humidity, my cakes and muffins never seem to turn out quite right. Cake balls give all the "YUM!" with none of the frustration, and can be decorated for a holiday theme!

Red Velvet Cake Balls

  • 1 box red velvet cake mix (cooked as directed on box for 13x9-inch cake)
  • 1 can (16 oz.) cream cheese or vanilla frosting
  • 1 package chocolate bark (regular or white chocolate)
  • Wax paper

After the cake is cooked and cooled completely, crumble into a large bowl. Mix in the can of frosting. (It may be easier to just use your fingers to mix together, but it will get messy.)

Roll mixture into quarter-size balls and lay on a cookie sheet or use a scooper. Chill for several hours in the refrigerator or 1-2 hours in the freezer, until firm.

Melt chocolate in the microwave in 30-second intervals, stirring after each one. Roll balls in chocolate and lay on wax paper until set. I use two forks under the cake ball to dip and roll in the chocolate.

Pro Tip: Only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. Chocolate is easier to work with when it’s warm.
