Recipe Box: Banana Oatmeal Muffins

February 23 is National Banana Bread Day. The first cookbooks to have recipes for this quick bread were published during the Great Depression. It was probably invented by a mom who couldn't bear to throw away browned bananas!

It's pretty rare for bananas to get overripe in our house since both my kids love them. Sometimes I buy two bunches and then put th second bunch out of their eyesight and reach, just so I can have enough to make this recipe! It's a yummy twist on the old classic.

Banana Oatmeal Muffins

  • 3 cups old-fashioned oats
  • 1 cup plain yogurt
  • 2 eggs
  • ⅔ cup sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 3 overripe bananas

Preheat oven to 400˚F. Spray a muffin tin with cooking spray.

Place oats in a blender or food processor and blend till the oats are fine like flour. Add remaining ingredients and blend until smooth. 

Pour or spoon batter into the muffin tin, filling nearly all the way. Bake for 20 minutes or until a toothpick inserted in the middle comes out clean. Makes 12 muffins.
