Recipe Box: Spinach Salad & Egg Wraps

🐰 Yummy Treat for Easter (or Any Time of Year!)

If you do the annual Easter Egg Hunt, there is always the question of what to do with all of those hard-boiled eggs! 

We still love to color eggs, but a few years ago we stopped HIDING them outside as I was always concerned as a Mom about their safety being out in the grass and sun for an hour or so. I am sure they were fine, I mean WE lived through it and then kept and ate the eggs for days after in our own baskets! (What were our Moms thinking?)

At any rate, now the edible ones stay inside in the cool and we hide the plastic ones with treats outside instead, keeping the hard-boiled ones safe and sound in the HOUSE to be used later in great recipes like THIS one! Enjoy!

This makes about three servings. You are definitely going to want to at least triple this recipe! It rocks!

Make-You-Famous Spinach Salad & Egg Wraps

  • 3 hard-boiled eggs (more to double, triple, or quadruple this recipe!)
  • 10-inch flour tortillas or healthy wraps
  • 5 cups baby spinach (organic if you can)
  • LOTS of crispy bacon (bacon: On my list of PERFECT foods)
  • 8 oz of fresh sliced mushrooms
  • Some mozzarella cheese (totally optional)
  • ½ cup or more of finely sliced red onion
  • Dressing (recipe below)

Dressing
(Note: I would double this too, at LEAST)

  • 5 Tablespoons red wine vinegar
  • ½ cup sour cream
  • 1 teaspoon salt
  • 2 Tablespoons sugar (don't judge)
  • 2 garlic cloves, minced (or MORE, of course!)
  • ½ teaspoon dry mustard
  • 1 teaspoon olive oil

Spread a great big handful of your baby spinach on your tortilla.

Drizzle that to-die-for dressing over the spinach...

Add the rest of your ingredients on top and then... go ahead, drizzle some more of the good stuff on top. Wrap them up burrito-style and serve with some veggie chips. Be a star!
