Recipe Box: Homemade Vanilla Extract

Did you know you can make your own vanilla extract? Not only is it less expensive per ounce than store-bought pure vanilla extract, it has a richer flavor and aroma too. It only requires two ingredients and it makes a great Christmas gift.

But it does take time — about eight weeks, generally — so now is the time to begin the process in order to be ready for the holidays.

This is a unique and special gift that costs less than $5 per bottle. I have found whole vanilla beans in wholesale stores this time of year and online for $10-$12 for 10 beans (which is enough to make one batch). A decent bottle of vodka will cost about $20. Small amber glass bottles (about two ounces) are easy to find online. Amber glass is essential, as exposure to light will change the flavor of the vanilla.

What You Need:

  • 1 bottle (750 ml) of vodka
  • 10-12 whole Madagascar vanilla beans
  • 10 amber bottles with screwtop lids

What You Do:

  1. Pour out about 1/2 cup of vodka... save it for later to reward yourself for getting a jump start on your holiday gifts!
  2. Slice each bean lengthwise, leaving it connected at the top and bottom. Pull the pod open just a little to expose the tiny seeds inside.
  3. Drop the beans into the bottle of vodka and screw the lid on tightly.
  4. Gently flip the bottle of vodka once or twice, then store it in a dark cabinet.
  5. Once a week or so, take out the bottle and gently flip it again. Honestly, this part isn't even really necessary, but it does help to develop the flavor faster.
  6. After six weeks, open the bottle and smell the liquid inside. If it still smells of alcohol, it isn't ready. Gently flip it and return it to the cabinet and check again in another week or two.
  7. When it no longer smells of alcohol and is officially vanilla, divide it evenly among the bottles. Trim the vanilla beans and put a piece in each bottle. It will intensify the flavor and add a personal touch too.
