Recipe Box: Peppermint Chocolate Bark

🎄 Yummy Treat for Christmas

By Denise Stacey December 17, 2014

Are you in need of a sweet treat for this week's holiday celebrations? Or maybe you're looking for a way to use up some of those candy canes?

This recipe for Peppermint Chocolate Bark is easy enough that the kids can help with the preparation. And there's no baking involved — just your microwave and freezer. Best of all, two batches can be prepared in just under an hour. Nice, huh?

Peppermint Oreo Bark

  • Candy Canes (a box of the full sized*, or 10 mini)
  • 12 Chocolate Sandwich Cookies (e.g., Oreo cookies)
  • White Chocolate Chips
  • Milk Chocolate or Semi Sweet Chocolate Chips

* the box of full-sized candy canes will be enough for two batches

Line a cookie sheet with either wax paper or parchment paper. Crush the cookies into bite site chunks and set aside. Crush the candy canes and set aside.

Editor's Note: I put mine in a large plastic zipper bag and use a hammer and a rolling pin... the kids love this part!

In a microwave safe bowl, melt one cup of the chocolate chips in the microwave for one minute; stir. Continue to microwave in 30-second intervals, stirring in between, until completely melted.

Pour the melted chocolate onto wax paper and spread out into a square or rectangle. Top with the crushed cookies. Place in freezer for about 10 minutes, until set.

Melt 1 3/4 cups of the white chocolate chips in a microwave safe bowl. White chocolate tends to be a bit trickier to melt than regular chocolate; microwave for one minute and stir, and then continue to melt in the microwave in 30-second intervals. Spread the white chocolate over the cookie-chocolate base. Top with the crushed candy canes.

Place back in the freezer for another 10-15 minutes or until set. Break into chunks or cut into pieces and enjoy!
