Recipe Box: Homemade Seasonings & Marinades

I started making my own seasonings a couple of years ago. It's cheaper, and I can control the ingredients. I store them in old spice containers that I washed after using all the contents; the spices have a shelf life of about a year, but they get used long before that.

Here are my most frequently used recipes.


Onion Soup Mix

  • ¾ cup dried minced onion
  • ⅓ cup beef bouillon
  • 1½ Tablespoons onion powder
  • ¼ teaspoon crushed celery seed
  • ¼ teaspoon sugar

Stir together all ingredients. Store in an airtight container.

5 Tablespoons mix = 1 package onion soup mix


Taco Seasoning

  • 1 Tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon oregano
  • ½ teaspoon paprika
  • 1½ teaspoons ground cumin
  • ½ teaspoon kosher salt
  • 1 teaspoon ground black pepper

Stir together all ingredients. Add seasoning and half a cup of water to 1 pound of ground beef or diced chicken.


Spaghetti Sauce

  • ¼ cup garlic powder
  • ¼ cup onion powder
  • ¼ cup oregano
  • 1½ Tablespoons basil
  • 1½ Tablespoons thyme
  • 1 Tablespoon salt
  • 1 Tablespoon sugar

Stir together all ingredients and store in an airtight container. To use, blend a can of diced tomatoes with ¼ cup mix.


Scott's Awesome Steak Marinade

  • ½ cup olive oil (garlic-infused preferred)
  • 4½ Tablespoons soy sauce
  • 3 Tablespoons red wine vinegar
  • 2 Tablespoons McCormick's Montreal steak seasoning
  • 1½ Tablespoons Worcestershire sauce
  • 1 Tablespoon crushed garlic
  • 1 Tablespoon garlic pepper blend

Combine all ingredients. Pour over steak, cover, and chill at least 1 hour before grilling.
