Recipe Box: Spring Cake Mix Cookies

I love making cookies from cake mix. Whenever cake mix goes on sale at the grocery store, I stock up.

It takes less than half an hour to bake two dozen Cake Mix Cookies and the recipe only requires three ingredients (plus one optional mix-in or sprinkle-on ingredient). Best of all, they give us a chance to be creative by making our own flavor combinations!

We wanted something that looked like spring, so we colored some frosting with pretty pastel colors and got to baking.

Cake Mix Cookies

  • 1 cake mix, any flavor
  • 2 eggs
  • ½ cup vegetable oil
  • ½ to 1 cup mix-in or sprinkle-on of your choice

Mix together cake mix, eggs, and oil; add your mix-in and stir. Drop by rounded teaspoons onto a lightly greased cookie sheet. Bake for 8-10 minutes at 350℉. DO NOT OVERBAKE! Makes two dozen cookies.

We used yellow cake mix for these cookies. Instead of a mix-in, we sprinkled on some pastel confections we found in the baking aisle. We spread the frosting in between two cookies to make pretty cookie sandwiches. And then we gobbled them up!

  • strawberry cake + shredded coconut
  • spice cake + raisins
