Recipe Box: Slow Cooker BBQ Pork

I love BBQ Pork Sandwiches! Tender meat and flavorful sauce wrapped up in a soft bun... yum!!!! Let your slow cooker do all the work with this simple recipe.

Slow-Cooker BBQ Pork

  • 1 boneless pork loin roast, approximately 3 pounds
  • 1 onion, sliced into rings
  • 1 bottle (18 oz.) of your favorite BBQ sauce (we love Stubb's All-Natural BBQ Sauce in Spicy or Smokey Mesquite)
  • 1 ½ Tablespoons mustard
  • 1 ½ Tablespoons honey
  • 1 Tablespoon soy sauce

Layer onion slices across the bottom of your slow cooker. Trim excess fat off pork loin roast and place on top of onions (this helps keep the meat from getting dry and adds flavor too). Add 1 cup water; cover and cook on LOW for 8-10 hours. 

Carefully remove meat from the slow cooker (it will be very tender). Dispose of the onions and juices in the slow cooker.

Once the meat is cool enough to handle, shred using two forks (or your fingers), removing all fat. 

Return the meat to your slow cooker, stir in the remaining ingredients, and cook on HIGH for 30 minutes. 

Serve on whole-wheat or pretzel buns with a garden salad and corn on the cob.
