This kid-friendly recipe has veggies, protein, dairy, and whole grains rolled (literally!) into one! The leftovers are great for packing in the lunchbox the next day.
Cheesy Chicken Roll-Ups
- 2 cans (10-12.5 ounces) chunk chicken breast
- 1/2 cup shredded cheddar cheese
- 1 container (3.5 ounces) yellow squash baby food
- 1 container (3.5 ounces) carrot baby food
- 4 ounces reduced-fat cream cheese
- 8 whole-wheat tortillas
Preheat oven to 350˚F. Cut the tortillas in half and set aside. In a large bowl, stir together all ingredients except tortillas until well blended. Heat in the microwave for 1-2 minutes, just until warmed. Spread two spoonfuls of chicken mixture along the cut side of a tortilla. Roll up and place seam-side down on a baking sheet; repeat. Bake 8 minutes, or till tortillas begin to crisp a little. Enjoy!
