Macaroni Recipe: Ice Cream Bread

Over the last week, I've seen a few different recipes for Ice Cream Bread and just had to give it a try. Admittedly, I was a skeptic at first. How can you make bread with only two ingredients — ice cream being one of them?! 

We found out about 40 minutes later that it IS possible and quite tasty. Ice cream bread is yummy served as is or would make a great base for a dessert such as strawberry shortcake!

We made two different kinds, strawberry and chocolate. For the strawberry bread, we used strawberry ice cream, flour, and a cup of fresh strawberries. For the chocolate bread, we used chocolate ice cream, flour, and 1/2 cup chocolate chips. Everyone liked both flavors, but the chocolate had a much stronger flavor.

This recipe makes one loaf and will work best with high quality, full-fat ice cream.

Ingredients:

  • 2 cups of your favorite ice cream, softened
  • 1 1/2 cups self-rising flour

Additional ingredients to mix in (optional):

  • strawberries
  • bananas
  • chocolate chips
  • sprinkles
  • nuts

Directions:

1.) Preheat oven to 350℉.

2.) Spray 8x4 or 9x5 loaf pan, set aside.

3.) In a medium bowl, mix softened ice cream and flour together until combined. Mix in any additional ingredients.

4.) Pour into the loaf and smooth out if needed.

5.) Bake for 35-45 minutes or until a toothpick comes out clean.

6.) Remove from loaf pan and allow to cool.

7.) Serve and enjoy!
