Recipe Box: Yogurt & Blueberry Stuffed French Toast

This French toast is the best of both worlds! It not only has nutritious ingredients like nonfat Greek yogurt and fruit, but it also doesn't skimp on some yummy ingredients like heavy cream and brown sugar.

That means you can indulge in this breakfast treat and still feel pretty good about what you are eating.

Blueberry & Yogurt Stuffed French Toast

  • 6-8 slices whole wheat bread
  • 3 eggs
  • 1/4 cup heavy whipping cream
  • 1 Tablespoon vanilla extract
  • 1/2 cup brown sugar
  • 2 cups nonfat, plain Greek yogurt
  • 2 cups blueberries

Heat a large skillet to approximately 425℉ or your griddle to medium-high. When you sprinkle water on it, the water should bead up instantly.

Beat eggs until creamy; add heavy cream and vanilla. Dredge each bread slice in the egg mixture. Let excess drip off. Dip in brown sugar, just to coat. (This step gives it a little extra sweetness, but can be omitted if you prefer.)

Place bread on greased griddle or skillet. Let each side cook to a golden brown. Don't rush. You want it to get nice and toasted, so the egg mixture will cook through.

Place one cooked slice on a plate. Add a dollop of yogurt and a handful of blueberries. Cover with another slice of French toast.  

Drizzle with syrup and enjoy!
