Rebenack Irish Soda Bread Recipe by Margaret Sullivan

  • 4 cups Hecker’s unbleached flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons salt
  • 2 Tablespoons sugar
  • 2 cups (approx.) buttermilk
  • ¼ box raisins (15 oz. size)
  • 1-2 Tablespoons caraway seeds (optional)

Stir together flour, salt, sugar, baking powder, and baking soda. Add caraway seeds and raisins and mix well. Add buttermilk a little at a time. The dough should not be sticky; it should feel like velvet.

In a clean bowl, form into one ball. Knead on floured board for 30 turns. Lay into a 9” greased and floured cast iron fry pan. Press into the shape of the pan. Cut a cross on top with a sharp knife and sprinkle flour on top.

Bake at 350โ„‰ for 10 minutes, then at 325โ„‰ for a total of 45 minutes (adjust according to your oven). The bread is done when it sounds hollow when you knock on the bottom of it.
