Recipe Box: Slow Cooker Meatball Subs

My slow cooker is the most-used appliance in my kitchen. It gets as much use during the summer months as the winter!

This recipe is hearty enough to fill up my boys after a day of active play without feeling heavy. Serve it with a large salad and a glass of milk and you've got a well-rounded meal that takes 15 minutes or less to prepare!

Slow Cooker Meatball Subs

  • 2 pounds frozen meatballs (or make your own)
  • 2 (15-ounce) cans tomato sauce
  • 1/2 cup diced bell pepper (shortcut: available in frozen foods aisle)
  • 1/2 cup diced onion (shortcut: available in frozen foods aisle)
  • 1/4 cup packed brown sugar
  • 2 Tablespoons prepared yellow mustard
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon each salt and pepper
  • Hoagie rolls
  • Mozzarella cheese (shredded or sliced)

Add meatballs to your slow cooker. In a medium bowl, combine remaining ingredients. Pour over meatballs and stir till coated. Cook on LOW for 4-5 hours. Serve hot in hoagie rolls topped with mozzarella cheese.

Note: For this recipe, I prefer beef meatballs to turkey, as they seem to hold their shape and maintain their texture better.
