Call it a pizza and my kids will eat it, even if it has spinach on it. This is a quick "go to" for breakfast, lunch, or dinner. Experiment with other ingredients like diced bell peppers, mushrooms, and tomatoes.
Egg "Pizza"
- Olive oil
- Tortilla
- 3 eggs, whisked lightly
- Spinach
- Colby-Jack Cheese
Preheat oven to 350℉. Heat a little olive oil in an oven-safe skillet on medium heat. Add tortilla and lightly brown bottom. Add whisked eggs and top with spinach and cheese.
Place skillet in oven and bake about 7 minutes or until eggs are set and cheese is melted. Slide "pizza" out of skillet and slice with pizza cutter. Enjoy!
