Want a great recipe for the fall? This one is quick and easy to make. So when you are craving the taste of pumpkin pie, take just a few minutes to whip up this treat.

Personal Pumpkin Pie

  • 1 egg
  • ½ cup pumpkin puree
  • 2 Tablespoons almond or oat flour
  • 2 Tablespoons sugar
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon baking powder
  • Whipped cream (optional)

Add egg to microwave-safe bowl or mug; beat lightly. Add remaining ingredients except whipped cream; stir together till well blended. Microwave on high for 3 minutes.

Place in refrigerator for 30 minutes to an hour until cooled or eat warm — your preference. Top with whipped cream and enjoy!
