The winter months are perfect for comfort foods. And there is nothing more comforting than a big pot of macaroni and cheese. Making it in the slow cooker is as easy as dumping in a few ingredients, turning it on, and walking away.
A few months ago I discovered a recipe for Creamy Macaroni and Cheese made in the slow cooker and, after a few attempts, perfected it. At least perfected it so every member of my family will eat it without complaining. That's a big accomplishment, right?
Slow Cooker Macaroni & Cheese
- 1 box (16 oz.) elbow macaroni
- 4 Tablespoons butter
- 3 cups shredded sharp cheddar cheese
- 3/4 cup sour cream
- 1 can condensed cheddar cheese soup
- 1 cup milk (I use 1%)
- A little salt and pepper (honestly I've never measured it!)
Boil the macaroni until tender. Drain and mix with the rest of the ingredients in the slow cooker. I really just dump it all together and stir it up.
Set your slow cooker to LOW for about 3 hours, stirring occasionally, and — voilà — you and your family will be enjoying a home-cooked comfort dinner!
