Recipe Box: Easy Gluten-Free Cookies

Nutritious and delicious dessert or after-school snack

Here is a super simple and delicious gluten-free cookie recipe to enjoy on Valentine's Day or any day! The goji berries add a nice pop of color to the cookies. Get the kids involved and have them assist with making these — they'll probably love mashing the banana and stirring the mixture.

Note: Rolled oats, chocolate chips, and nut butters are generally gluten-free, but some brands may be manufactured in a plant that is not. Be sure to check the label if this is a concern for you.

Easy Gluten-Free Cookies

  • 1 banana
  • 1 cup GF rolled oats
  • handful of goji berries
  • handful of mini dark chocolate chips
  • your favorite GF nut butter (we like almond)

Preheat oven to 350℉. Mash the banana and combine with the oats, berries, and chocolate in a mixing bowl.

Form into small circles. Place on a cookie sheet misted with cooking spray. Bake for 15-20 minutes.

When they come out of the oven, spread some nut butter on top. Let cool. Eat with your loved ones!
