This is one of the greatest recipes for the slow cooker. It is so tasty and easy to make. And it's always been a crowd-pleaser — even for my 6-year-old and 3-year-old!
Slow Cooker Tortellini Sausage Soup
- 1 lb. mild Italian sausage
- 1 bag frozen green beans
- 1 cup fresh zucchini, chopped
- 1 cup fresh diced tomatoes or 1 can petite diced tomatoes
- 3 carrots, sliced
- 1 medium onion, diced
- 1 Tablespoon Italian seasoning
- 1 carton (32 oz) chicken stock
- 9 ounce container refrigerator cheese tortellini
- Shredded Parmesan or mozzarella cheese
Crumble the raw sausage in slow cooker (if using sausage with casing, just remove casing and crumble). Add vegetables and Italian seasoning.
Cook on HIGH 3-4 hours, stirring occasionally until sausage is cooked.
Add chicken stock and cook on HIGH for 1 hour.
Add cheese tortellini and cook on LOW for an additional 30 minutes. Serve topped with cheese.
