My growing boys get H-U-N-G-R-Y during the school day if I don't start them off with a protein-packed breakfast. This delicious recipe cooks while we sleep so it's one less thing I have to worry about in the morning!
Slow Cooker Breakfast Scramble
- 1 lb. breakfast sausage
- 2-3 cups shredded cheddar cheese
- 16-ounce bag of frozen hash browns
- 12 eggs
- 1 cup milk
- Veggies: Onions, peppers, tomatoes, etc.
Brown the sausage.
Spray slow cooker with cooking spray. Add hash browns, sausage, cheese, and any other ingredients you choose to the slow cooker and stir to combine.
In a separate bowl, whisk the milk and eggs and then pour over the mixture in the slow cooker.
Cook on LOW for 6 to 8 hours.
Serve topped with additional cheese, or serve in tortillas with guacamole and/or salsa for a grab-n-go breakfast.
