Recipe Box: Bacon-Wrapped Meatballs on the Grill

Summer's coming! Crank up the grill and cook up a tasty dinner that is also fun for the kids to help put together. This meatball recipe is a great go-to recipe to get you out of the funk of cooking the same ol' boring dinners. It's also a great appetizer when you have guests. It's so easy... and so delicious!

Bacon-Wrapped Meatballs

  • 1 pound ground beef
  • 1 pound pork sausage
  • 2 large eggs
  • 1½ cups Italian bread crumbs
  • 2 cloves minced garlic
  • ½ cup finely chopped onions
  • Thick-cut bacon
  • 1 red onion, cut into large chunks
  • 1 green bell pepper, seeded and cut into large chunks
  • 1 red bell pepper, seeded and cut into large chunks
  • 1½ cups barbecue sauce
  • Bamboo or metal skewers

Soak the bamboo skewers for 20 minutes in a glass of water to keep them from burning on the grill. You can skip this step if using metal skewers.

Place ground beef, pork sausage, eggs, bread crumbs, garlic, and chopped onion into a bowl; thoroughly mix the ingredients together. Roll the mixture into approximately 28 golf ball-sized meatballs.

Cut the bacon in half and wrap each meatball with a half slice of bacon.

Place meatballs on the skewers, adding bell pepper chunks and red onion chunks to fill them up. (They are now called kabobs!) Place kabobs on the top rack of the grill for 20 minutes at 350˚F.

Brush BBQ sauce over the entire kabob and cook for another 10 minutes or so, adding more sauce if desired.

When they're done to your liking, remove them from the grill, let cool, and ENJOY!
